History
Castelo de Brañas was founded in 1989 as a small family business with the goal of restoring the production of Queixo do Cebreiro, a cheese that was at risk of disappearing. Since then, the company has continued to produce artisanal, small-batch cheese, achieving both regional and national recognition for the quality of its product.
Product types
The company primarily produces two varieties of Cebreiro DOP cheese: fresh cheese and cured cheese. The fresh cheese is a soft, grainy, white cheese made with pasteurized cow's milk, while the cured cheese is aged for a minimum of 45 days and has a more intense flavor. Both are sold in different sizes and are distinguished by their artisanal craftsmanship.
Mission
The company's fundamental purpose is the recovery and preservation of the local cheesemaking tradition, focusing on the quality and artisanal production of Queixo do Cebreiro, with the aim of maintaining the product's original essence and achieving excellence through respect for tradition.
